Sens2BiteSafe - Allergen Analysis Breakthroughs: Enhancing Food Safety with Electrochemical Paper-based Analytical Devices

The Sens2BiteSafe project aims to tackle one of the main challenges in food safety: the prevention of allergic reactions. To achieve this, it proposes the development of highly sensitive and selective analytical methods, aligned with current food labeling legislation. The primary goal is to create paper-based electrochemical devices that are portable, affordable, and capable of simultaneously detecting multiple food allergens. This innovation seeks to significantly improve the quality of life for people with allergies, while also contributing to the reduction of food waste, production costs, and the burden of treating allergic reactions.

This ambitious project aims to advance the state of the art in two critical areas of food safety:

Technological innovation: Developing new analytical tools with high commercial potential that meet market and regulatory demands.

Strengthening food monitoring: Deepening scientific knowledge and enhancing available tools for effective allergen control throughout the entire food production chain—from harvest to final labeling.

By integrating applied research with practical solutions, the project positions itself as a catalyst for transforming how allergens are detected, managed, and communicated - promoting greater consumer safety and boosting industry competitiveness.
